The St. Regis Punta Mita Resort‘s AAA Five Diamond rated restaurant, Carolina, has recently welcomed Jesús Duron as the new signature chef who will oversee all culinary aspects including the creation of the restaurant’s tasty seasonally-inspired menu that’s known for using the freshest, locally sourced ingredients.
Duron, who has ten years experience working in highly esteemed restaurants, most recently held a position as Chef de Partie Garde Manager and Patîsserie at Elmer Restaurant, a chic bistro in Paris. His other past positions include serving as a chef at places like La Marine in Noirmoutier, France; Azurmendi Restaurante in Vizcaya, Spain; El Celler de Can Roca in Girona, Spain; and multiple restaurants in Mexico including Pujol, Quintonil and Biko. In fact, Duron began his career as kitchen assistant in Mexico City at Les Moustaches, an elegant restaurant specializing in French cuisine. Fluent in both Spanish and French, Duron will bring his global experience and creative vision to Carolina where he will craft irresistible dishes specializing in fine local meats, seafood and fish.
