Break out the spoons and chips because The St. Regis Punta Mita Resort is preparing to debut its seasonal Pop-Up Avocado Bar in celebration of Cinco de Mayo. The beachside pop up will feature an all-avocado menu created by Executive Chef Manuel Peruyero—basically the most irresistible menu you’ll likely experience because who doesn’t love a plate filled with creamy avocados? The unique menu will include items for lunch and dinner and will range from appetizers and cocktails to entrees and desserts. So yes, you can spend all day there. The bar will be available starting May 5 and will sadly disappear after May 31 so make sure not to miss this delicious amenity.

- Avocado Gazpacho: with avocado cannelloni and King Crab
- Grilled Avocado Flatbread: with crispy bacon, avocado dressing, fresh arugula and avocado oil
- Avocado Club Sandwich: served on garlic brioche bread with avocado Milanese, fried egg and poached lobster in a butter and coriander seed sauce
- Guacamole with Prime Ribeye Steak: served in a creamy avocado and chicharron sauce with homemade tortillas
- Avocado Ice Cream: with corn crumbles and a creamy caramel sauce
- Intense Chocolate with Creamy Avocado: served with macadamia mousse
