We had the opportunity to chat with the General Manager of IT Restaurants to get to know a little bit more about the concept that has been a great success around the world.
1. How was the IT Restaurants concept developed?
The concept of IT Restaurants came from the idea of offering a product that brings together a high profile of Mediterranean cuisine, a wine list that embraces the whole world and a bar that has its roots in the classic cocktails redesigned for IT. IT represents our way of offering entertainment in the upcoming years, a place where you can spend different moments, from aperitifs to dinner, to after dinner along with the sound of our resident DJs. The duality of our space, which is both restaurant and both lounge, is something unique and innovative, a new way of intending a restaurant that sets an example of what a restaurant should look like and offer to its clients. We define ourselves as a non-boring place.
2. Why did you decide to open one in Tulum?
The opening of IT Tulum was a great opportunity for us at a time when the whole world was at a standstill. We decided to infuse enthusiasm in all our staff members while giving new energy to the brand. And for us to open in Mexico, a place “away from home”, seemed an opportunity too tempting to refuse.
3. Are the menu and the architecture in all IT Restaurants the same or do you change them according to the location?
For the menu we kept it the same in all the venues, leaving however space for dishes more in line with the territory. When it comes to architecture, our speciality is that the restaurants are different from each other, changing according to the location and the country.
4. Which one is your favourite location?
All IT are my favorites, but I have to admit that IT Ibiza holds a special place in my heart. It’s the place where it all started, where the unique combination of Italian aesthetic, flavors and taste came together with the soul and the lifestyle of Ibiza, giving life to something hybrid and completely new.
5. What makes IT Tulum so special?
I think it’s a perfect mix of IT products mixed with the vibes of the place. It’s something magical.
6. Are you planning on expanding to more cities in Mexico?
For the moment we are working on IT Tulum to make it unique.
7. How do you decide where to open?
We plan our openings following our customers in the most important cities in the world.
8. What did it mean to get a Michelin Star in your Milan branch?
It was really exciting to be recognized in our homeland, especially since we were the first restaurant with 120 seats, a resident DJ and a bar that is the great protagonist to be awarded a Michelin star.
9. What advice would you give to a young person who wants to start in the restaurant business?
I would recommend a lot of love, a lot of passion and a lot of work…
10. What do you think is the secret behind the success of IT Restaurants?
I think it lies in the product and in the vibes we offer.
