Take your tastebuds to the Far East at Las Ventanas al Paraiso’s brand new restaurant Arbol. Spanish for “tree,” Arbol is the first Asian restaurant in Los Cabos and the hotel’s third formal dining destination.
The new restaurant is led by Anand Singh, who previously served as head chef of Diamond Resort in the Maldives for more than four years, and brings his experience cooking in India, the Maldives, the United Arab Emirates and the Seychelles. Originally from Mumbai, Singh has used Indian culinary traditions plus bold Pan-Asian influences and Asian cooking techniques to bring a new spin to fresh Baja fish.
Hungry diners can expect to find a wide offering of seafood and shellfish on the menu plus flavorful curries, Wagyu beef and vegetarian plates. Guests can also grab a seat at the raw bar which features fresh oysters from Baja, platters of shellfish, sushi, sashimi and more. Dine on dishes like chicken tikka and tandoori lobster with mango chutney cooked in a tandoor oven from Delhi, India or stir-fry Waygu beef and seafood bami goreng cooked in a wok from Hong Kong. For Singh’s standout dish, order the octopus curry.
The food is not the only star at Arbol. A resident DJ sets the mood with lounge music, providing a captivating atmosphere as the dining room opens up to the Oasis pool and striking views. Seven sculptural trees by Guadalajara-based artist David Luna feature dangling, glowing lanterns and create a forest-like space in the dining area. Even the entrance features the tree sculptures plus 500 birdcage lights, creating a magical start to the experience.
Arbol is open daily for dinner from 6 to 10 p.m.
Just below Arbol is the new Oasis Pool, the first lazy river in the Baja. The 5,000-square-foot infinity pool has all the makings of a perfect sunny day. Guests can lounge in luxury cabanas, hang out at the swim-up bar, munch on tacos at LVP La Taqueria or request a margarita from the pool butlers. The pool also has underwater speakers and a resident DJ. Dry off with mini-golf or movie night at the Pool Cinema which features floating couches, popcorn and ice cream.
