El a\u00f1o pasado, Ren\u00e9 Redzedpi, chef y co-propietario de Noma se dirigi\u00f3 a la moderna ciudad de Tulum, donde abri\u00f3 su restaurante pop up temporal, Noma M\u00e9xico, en respuesta a una gran demanda. Junto a \u00e9l se encontraba el chef de cocina Jos\u00e9 Luis Hinostroza, quien desde que el pop up termin\u00f3 en mayo, se ha convertido en socio de Arca<\/a>, un restaurante local en Tulum. Ahora, casi a un a\u00f1o de que comenzara la locura que desat\u00f3 Noma, Hinostroza se prepara para abrir su propio restaurante cerca de Arca, llamado Natal. Natal es su primer proyecto en solitario, y seg\u00fan Eater<\/a><\/em>, Natal\u00a0\u201cse enfocar\u00e1 en la cocina, las t\u00e9cnicas y los ingredientes pre-coloniales mesoamericanos\u201d, incorporando \u201csemillas, granos, nueces, flora y fauna de la regi\u00f3n\u201d en la cocina.<\/p>\n

Adem\u00e1s de destacar los sabores de M\u00e9xico, Natal tambi\u00e9n se encargar\u00e1 de exponer el dise\u00f1o mexicano al colaborar con la empresa detr\u00e1s de la imagen de Noma M\u00e9xico, La Metropolitana<\/a>, un equipo de dise\u00f1adores con base en la Ciudad de M\u00e9xico. En su dise\u00f1o destacan algunos elementos distintivos, como foso hechos a medida, troncos como mesas y sillas y enormes rocas. \u201cEl entorno se asemejar\u00e1 a algunas de las experiencias personales que hemos tenido en peque\u00f1as comunidades ind\u00edgenas\u201d, dijo Hinostroza. Con hasta ocho fosos, Natal podr\u00e1 recibir hasta 70 comensales al mismo tiempo. Los fosos est\u00e1n inspirados en pibs, que son enormes estructuras tipo hornos en el piso que usualmente se utilizan para preparar comidas ceremoniales al calentar piedras y cubrir los ingredientes en el foso con hojas y tierra. En los platillos destacan las prote\u00ednas y los vegetales cocinados bajo tierra hasta por seis horas. Hinostroza tambi\u00e9n invita a los comensales a que disfruten de su comida con las manos y que \u201csumerjan o unten la salsa restante o el caldo que queda en el plato, una acci\u00f3n que hace parte del ADN de la cocina mexicana\u201d, explic\u00f3.<\/p>\n

Las labores de construcci\u00f3n de Natal est\u00e1n programadas para iniciar en febrero, con una fecha de apertura programada para junio de 2018.<\/p>\n
